How to set the default document encoding in Adobe Dreamweaver

In many insances I use Adobe Dreamweaver. This is bacause of it’s instant-ftp upload facility which is ideal for wring and testing on the fly. One thing that became aparent yesterday was my Dreamweaver automatically sets the document encoding to ‘iso-8859-1′ and a great deal of the time we want to use ‘utf-8′.
